Delicious Taco Flavored Filling
It is a great make-ahead recipe and freezer meal. Another bonus is that any leftover stuffing can also be for a taco salad later in the week. I use green bell peppers because I prefer the taste, and they are less expensive than red, yellow, and orange. If family members like the colorful varieties’ sweeter and milder taste profile, go for it, especially if it entices them to eat more vegetables. Look in the produce section for sales on the “stoplight packages” – green, yellow and red in a bag. Growing peppers in your garden is also a great option.
