One Prep Two Dinners - BBQ Batch Cook

This post contains my favorite recipes to cook on the grill in batches and easy ideas for transforming leftovers into another dinner later in the week. There is a menu and all the recipes below to simplify meal planning with delicious and healthy recipes.

Caesar Salad and grilled salmon

Use the Grill to Meal Prep for the Week

The backyard grill has lots of real estate to double up your portions. This cooking method, often called batch cooking, involves preparing a large quantity of food at once, usually consumed over several meals or stored for future use. Plan two or more recipes that work off of each other to make meal planning easier. For instance, grill a large salmon filet, enjoy half that night, plan the remainder for fish tacos, or add to a Ceasar Salad for another meal.

Benefits of Batch Cooking

These recipes recommend marinating the meat before grilling. Depending on the cut of meat/fish and tenderness, it may marinate for 1 -24 hours. Marinating can make meal planning tricky since it takes time and planning. Enjoy the benefits of your efforts and double or triple your portions to have leftovers for several meals. Additionally, grilled meats often develop more decadent flavors after sitting in the fridge for a day.

More Reasons to Meal Prep on the Grill

  • Quickens clean up since there are no inside splatters or cooking pans to clean up.
  • Streamlines cooking since the grill provides ample cooking space to double or triple the recipe.
  • Improves taste and texture with the smokey flavor, crispy crust, and delectable grill marks.
  • Cuts calories by the excess fat dripping off during the grilling process.
  • Provides kitchen help for the cook by designating a family member to be the grill chef.
  • Keeps heat outside so you can comfortably cook other dishes in the kitchen.

How to Store Leftovers Properly

Store the leftover meat portions with juices in a glass-lidded container for 3 – 4 days to maintain flavor and texture. I do not recommend cutting the extra portions before storing. Leaving the protein in larger pieces keeps the juices inside until ready to cut and heat for your leftover meal.

What is the Best Protein to Grill for Leftovers?

1. Grilled Pork Tenderloin Easy Meal Prep

Grilled Pork Tenderloin is a fantastic option for batch-cooking.  Enjoy the dish freshly grilled with an apple salad and sweet potatoes, and use leftovers in sandwiches, salads, or, my favorite, Leftover Pork Stir Fry with Brown Rice.

2. Healthy Salmon Recipe for Grilling

This grilled salmon fillet recipe is delicious, fresh off the grill with zucchini in Coconut sauce. The leftovers can be flaked in salads and pasta dishes or served cold on a sandwich or wrap for a quick and nutritious meal. Try it in Ceasar Salad

3. Grilled Chicken Leftover Ideas

Start the week with Grilled Chicken Breast with Ginger Lime Marinade and Watermelon Salad. Slice, chop, or shred leftovers into a chicken salad, add to a favorite casserole quesadilla or pasta for another satisfying meal, or add them to Make-Ahead Brussels Sprout Salad to transform this recipe into a main course

4. Make the Most of Grilled Flank Steak

Grill a flank steak and a vegetable medley on Sunday, and you’ll have several delicious meals: fajitas, steak salad, and steak tacos.
