Do you miss gathering with family and friends this season because of the pandemic? This summer grilled chicken recipe with watermelon salad and rice pilaf with almonds and raisins is the perfect antidote to get you grilling and eating outside. Also, being outside can provide an emotional boost and a diversion from current concerns.

I cut this recipe out of the paper years ago, and it became an instant favorite. I used it so much that the recipe started to self-destruct, so I had to take a picture to archive it- see below.

Birthday Dinner

The recipe graduated to the birthday dinner for my grandson. I made this meal for my daughter and son-in-law when they brought our first grandson home from the hospital almost two years ago. He was born a week before Labor Day Weekend. That remarkable occasion needed a fun and delicious summer meal, and the grilled chicken and watermelon salad recipe fit the bill perfectly. We repeated the dinner for his first birthday on our family vacation last year. If we cannot be together for my grandson’s second birthday, we will have a Zoom or Facetime dinner.

Gather Safely

Family gatherings and meal traditions are essential, but they can be tricky because of the pandemic. The Mayo Clinic has these tips if you decide to plan a family gathering:

  • Allow for social distancing between people from different households and skip the hugs and handshakes. Plan activities that don’t require close contact, such as sidewalk chalk for kids and games like Frisbee. And offer hand sanitizer.
  • Keep your gathering small, maintaining social distance from others. Plan activities that don’t require close contact. You may even choose to have everyone bring their food and drinks to enjoy the togetherness with less chance of the virus spreading. Wear a mask when not eating or drinking.

Grilled Chicken with Watermelon Salad


Description

Simple ingredients with complex flavor combinations! Great  for summer gatherings or a birthday celebration.


Ingredients

Units Scale

Meat

8 skinless, boneless chicken breasts halves

Marinade

1 Tbsp lime zest

1/4 cup fresh lime juice

1 Tbsp finely chopped fresh ginger

3 Tbsp finely chopped fresh cilantro

1 Tbsp honey

2 Tbsp vegetable oil

1/2 tsp cayenne pepper

1 tsp kosher salt

Watermelon Salsa

4 cups of seedless watermelon, diced

1 sweet onion (Vidalia), diced

1/4 cup cilantro, chopped

12 jalapeno pepper, seeds and membranes removed, minced

1/2 teaspoon kosher salt

1 tsp honey

3 Tbsp fresh lime juice

Salad

1 cup feta cheese, crumbled, optional – omit if paleo

5-oz package of baby arugula


Instructions

  1. Mix marinade and place in a zip lock bag; add chicken pieces. Seal the bag and place it in the refrigerator for 2 – 3 hours or overnight.
  2. Toss Salsa Ingredients together, lightly, and chill in the refrigerator.
  3. Grill: Remove the chicken from the marinade and grill over a hot grill for 8 – 10 minutes or until there is no pink in the center. Turn once. The temperature should read 165º with a meat thermometer.
  4. Spoon salsa over arugula and top with feta cheese.

Notes

Serve with  rice pilaf. The original recipe does not call for feta or arugula. That is my addition to make a side salad rather than a salsa
