Have You Heard of the Meatless Monday Campaign?

Meatless Monday is an organization that has been around since 2003 with a goal “to reduce meat consumption by 15% for our personal health and the health of the planet”. More information, news, and recipes can be found on the website: Meatless Monday Recipes.

Why Meatless or Vegetarian?

 I am trying to rotate more vegetarian options into my meal plan. Meat shortages and prices are increasing because of the pandemic. Employees are getting sick, and plants are closing temporarily to clean and make safer work arrangements. Fortunately, there are messages across the stores limiting purchases to discourage hoarding. The meat supply chain is challenging, but there are plenty of other options: Eggs, beans and rice, tofu, canned tuna and salmon, and fresh and frozen fish and seafood. I purchased frozen shrimp, salmon filet, and tofu this week, and I have plenty of dried beans, rice, canned tuna, and salmon in the pantry from the previous week’s purchases. The pandemic is one reason to go meatless, but vegetarianism can also help the budget and health and add variety to meal selections.

How to Get Meatless Recipes

I don’t have many meatless recipes in my meal index, so it is time to investigate new options. The Meatless Monday site is a great resource to discover new recipes. I also use a subscription recipe service called Emeals to find new healthy recipes and menu variations. They email me seven new recipes every week. The recipes also integrate with the grocery stores in which I shop. The ingredients load into the grocery store’s website, and I choose which items to load into my cart. If I do not need the ingredient, I merely swipe through to ignore that specific item. I then add the other groceries that I need for the week. I choose to pick up or deliver. If you do not have a pickup and delivery service in your area, using the Supper Sanity grocery shopping list will keep shopping efficient and fast.

Emeals has several plans: Paleo, Mediterranean, Instant Pot, Clean Eating, Keto, Quick and Healthy, Diabetic, Gluten-Free, to name a few. If I choose the Vegetarian Family Plan, two weeks of recipes load into my phone. Each recipe will serve 4-6. There is also a plan for two if you have a smaller household. I choose the family plan because I like to have leftovers for lunch. You can try Emeals for free for 14 days. I find the variety and digital integration very helpful.
